Clean the mushrooms with a soft brush or a damp paper towel and trim the tough base of the stems. Slice them thinly and set aside.
~5 minHeat the olive oil in a large pan over medium heat. Add the whole garlic clove and the chopped onion and cook gently for 2 to 3 minutes until softened.
~3 minRemove the sausage from its casing, crumble it into the pan, and brown it thoroughly, breaking it up with a spoon.

~8 minStir in the cream and cook for 1 to 2 minutes more until the sauce is rosy and creamy. Season with black pepper.
~2 minMeanwhile, bring a large pot of salted water to a boil and cook the penne until al dente. Reserve a cup of pasta water, then drain.
~10 minAdd the drained pasta to the sauce and toss thoroughly over low heat, loosening with a splash of pasta water if needed. Finish with grated Parmigiano Reggiano and a little more parsley, then serve immediately.
