Orecchiette con le cime di rapa is the defining plate of Bari and the wider Puglia region, a perfect example of cucina povera built from a handful of humble ingredients. The little ear-shaped pasta is cooked in the same pot as the cime di rapa (broccoli rabe or turnip tops), so the greens release their gentle bitterness directly into the pasta. While they boil, anchovy fillets are melted into warm extra-virgin olive oil with crushed garlic and a piece of peperoncino, the garlic and chili then lifted out so only their perfume remains. Everything is tossed together over high heat with a splash of starchy cooking water to bind it into a glossy coat. Traditionally no cheese is added; the salt of the anchovy and the richness of the oil carry the dish, with toasted breadcrumbs scattered on top for crunch in many Barese homes. A vegetarian version simply leaves out the anchovy and leans harder on garlic, chili, and good oil.

320 g orecchiette
1 kg cime di rapa broccoli rabe / turnip tops, tough stems removed, tender leaves and florets kept
6 tbsp extra-virgin olive oil
2 clove garlic peeled and lightly crushed, removed after flavoring the oil
6 piece anchovy fillets in oil, mashed and melted into the oil
1 piece peperoncino fresh or dried red chili, deseeded; remove after flavoring the oil
4 tbsp breadcrumbs stale bread, toasted in oil until golden (optional)
0 salt coarse salt for the boiling water, to taste

Instructions

Prepare the cime di rapa

    Trim the cime di rapa: snap off the thick, woody lower stems and any tough or damaged outer leaves. Keep the tender inner leaves and the bitter floral tops, breaking larger pieces by hand so they cook evenly.

    Rinse the trimmed greens well in cold water and set aside to drain.

Make the garlic, anchovy, and chili oil

    Warm the extra-virgin olive oil in a wide pan over low heat with the crushed garlic cloves and the whole peperoncino. Let them gently flavor the oil without browning the garlic.

    Add the anchovy fillets and mash them with a wooden spoon or fork until they dissolve into the oil. Lift out and discard the garlic and the peperoncino, leaving a savory, aromatic oil behind. Set the pan aside.

Toast the breadcrumbs

    In a separate small pan, toast the breadcrumbs in a little olive oil over medium heat, stirring constantly until deep golden and crisp. Tip them onto a plate at once so they stop cooking and do not burn.

Cook everything together and finish

    Bring a large pot of salted water to a rolling boil. Add the cime di rapa and let them soften for about 4 minutes.

    Add the orecchiette to the same pot with the greens and cook until the pasta is al dente, following the timing on the package. Scoop out a ladle of the starchy cooking water, then drain.

    Return the drained pasta and greens to the pan with the anchovy oil. Toss over high heat for about 2 minutes, adding a splash of the reserved cooking water to create a glossy coating that clings to the orecchiette.

    Serve hot with a drizzle of raw extra-virgin olive oil and a generous scattering of the toasted breadcrumbs on top. Add a pinch more chili if you like extra heat.
