Cut each chicken wing into sections at the joints and pat the pieces thoroughly dry with paper towels so they brown rather than steam.
~5 minHeat the oil in a wok or wide pan over medium-high heat. Lay the wings in a single layer and fry until golden, about 3 to 4 minutes per side, then nudge them around the pan.
~8 minAdd the ginger and scallions and stir for a minute until fragrant. Pour in the Shaoxing wine and scrape up any browned bits from the bottom of the pan.
~2 minPour in the Coca-Cola, light soy sauce, optional dark soy sauce, and the optional star anise and bay leaf. Bring to a boil, then cover and simmer over medium heat, flipping the wings once halfway, for about 15 minutes. Skim off any foam in the first few minutes.
~15 minUncover the pan and fish out the ginger, scallions and spices. Raise the heat to high and let the sauce bubble vigorously, tossing the wings to coat, until it reduces to a thick glossy glaze that coats a spatula, about 8 to 10 minutes. Stop while a thin pool of sauce remains, as it thickens as it cools. Taste and adjust with a little salt.
